A list of 14 allergens is the training aid; the chart behind it is the record. The Food Standards Agency's allergen guidance, cited below, says only the 14 allergens are required to be declared as allergens by food law: celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, peanuts, sesame, soybeans, sulphur dioxide and sulphites at more than ten parts per million, and tree nuts. The list goes on the wall; the chart, dishes down and the 14 across, built from the recipes and dated, goes behind the counter. The allergen matrix on this site prints the chart from the menu, free and without an account.
The 14, as the law names them
Celery; cereals containing gluten; crustaceans; eggs; fish; lupin; milk; molluscs; mustard; peanuts; sesame; soybeans; sulphur dioxide and sulphites above the stated threshold; tree nuts. The guidance cited below is the source.
What the list cannot tell you
Which dish carries which. That comes from the recipes and the ingredient labels, which change with suppliers without any change to the dish's name, and it is why the chart is dated and rebuilt at the delivery rather than at the complaint. The list is static; the chart is not.
The chart
Dishes as rows, the 14 as columns, present and may-contain marks, the date and the kitchen's name. The matrix on this site prints it at the size of the menu, and each version is kept so the chart that was current on any date can be produced.
Keeping it
Each dated version kept with the HACCP plan, so the answer given on a date can be shown. FoodDocs lists its Lite plan at $99 per site per month billed monthly or $79 billed annually, and its Standard plan at $199 per site per month, with a free 14-day trial, on its pricing page cited below. ProbeLedger Pro is $49 per month for the whole site.
