Every figure on this page is computed from the inputs you enter, by the method stated below it. The only constants ProbeLedger supplies are the published temperatures, holding limits, allergen list and HACCP principles, each cited where it is used. The defaults are a worked example to replace with your own.
A food hygiene inspection checklist is the walk a kitchen does on itself before an inspector does it for them: the management system in use with today's records, the fridges and hot-holds inside their limits, the probe checks with corrective actions where a reading failed, the allergen matrix current, the cleaning signed, the training dated, and the structure and pests walked. The food safety audit checklist on this site runs the walk and scores it, free and without an account; ProbeLedger Pro keeps every run dated against the site so the trend is on record.

Records first
An inspector reads the records before the kitchen: are the checks from today, are the failures actioned, is the system the kitchen actually runs or a binder for visitors. Checks recorded at the moment they are taken are the whole difference, and that is what the log on this site is for.
The temperature rows
Fridges at their limits, hot-hold above the Danger Zone that the FSA gives as between 8 - 63°C, cooking checked against 70°C for 2 minutes or an equivalent. Each row carries the reading, the time and the initials, and each failure carries the corrective action.
Allergens, cleaning, training, structure
The matrix for today's menu, the schedule signed by the cleaner, the training per person with dates, the fabric and the pest checks. The audit checklist walks each section so nothing is skipped on a busy day.
Scored, dated, kept
The checklist scores the walk so the weak section is visible, and Pro keeps every run dated against the site. Platform pricing, for the record: FoodDocs Lite is $99 per site per month billed monthly or $79 billed annually; ProbeLedger Pro is $49 a month, flat, whoever is in the kitchen, and every tool on this site computes free with no account.

Food hygiene inspection checklist: common questions
Is the checklist free? Yes, with no account and no card. Pro keeps the runs dated against the site.
How often should the self-check run? The temperature rows daily; the full walk at the interval your management system sets, often enough that the inspector's visit finds a routine.
What fails kitchens most often? Records that were not made on the day: checks reconstructed from memory, failures with no corrective action written beside them.
