Every figure on this page is computed from the inputs you enter, by the method stated below it. The only constants ProbeLedger supplies are the published temperatures, holding limits, allergen list and HACCP principles, each cited where it is used. The defaults are a worked example to replace with your own.
A digital HACCP system replaces the temperature sheet on the fridge door and the binder in the office with checks that arrive on a phone when they are due and readings that are stored the moment they are taken. For a small kitchen the point is not the sensors or the dashboards; it is that every reading is timestamped, attributed and findable, and that a missed check is visible the same day rather than at the inspection. The temperature log planner on this site sizes the load; Pro keeps the readings.

Plan the readings before you buy anything
Four fridges, two freezers and two hot-holding units checked twice a day, six days a week, is a known number of readings and minutes. The temperature log planner on this site prints them from your counts, with the FDA holding limits the readings are checked against, so the digital system is sized to the kitchen rather than to a vendor's demo.
Record the reading at the unit, at the time, with the person
The reading, the unit, the time and the person are the record; a value typed in later is a reconstruction. A digital system worth having refuses to let the check be back-filled silently, flags the reading outside the limit at the moment it is taken, and asks for the corrective action then. Pro records the check against the service day with the sign-off.
Show the gap the same day
The value of going digital is that a missed reading is visible at close rather than at the inspection. A daily view of which checks were due, which were done and which were out of limit, per site, is the report an owner with two kitchens actually needs, and the one a binder can never produce.
Digital HACCP system: common questions
Is there a free digital HACCP system?
The temperature log planner and the hot food temperature check on this site compute free with no account, and you can print the plan. ProbeLedger Pro is the digital system: checks due on the phone, readings stored against the unit and the day, out-of-limit flags, sign-offs and exports.
Do I need sensors?
Not for a small kitchen. A probe, a phone and a record made at the time of the check meet what an inspector asks for. Sensors add continuous readings; they do not replace the check a person signs off.
What temperatures does the system check against?
The published ones, cited on each page: the FDA's 40 °F cold-holding limit, 140 °F hot-holding minimum and 0 °F freezer figure in the US, and the Food Standards Agency's cooking and danger-zone figures in Great Britain. The tools print the figure they check against so the limit is never a guess.

A digital HACCP system that lets a reading be entered after the event has digitised the binder without fixing it; the timestamp at the moment of the check is the whole point.
